SLOW ROASTED DIJON SALMON

INGREDIENTS
1 (3-pound) salmon fillet, skin on
4 garlic cloves, grated
¼ cup fresh parsley, minced
1 tablespoon Dijon mustard
½ teaspoon kosher salt
2 tablespoons olive oil
INSTRUCTIONS
Preheat the oven to 325°F. Line a baking sheet with parchment paper.
Place the salmon, skin side down, on the prepared sheet.
In a small bowl, combine the garlic, parsley, Dijon mustard, salt, and olive oil to form a thick paste.
Spread the paste evenly over the salmon.
Roast for 20 minutes, until the salmon flakes easily with a fork but is still tender and moist in the center.
Serve warm, garnished with extra parsley if desired.
