INGREDIENTS
Hot Honey Saltines
2 sleeves saltine crackers
½ cup unsalted butter
½ cup vegetable oil
½ cup honey
2 teaspoons red pepper flakes
Whipped Goat Cheese
10 ounces goat cheese, room temperature
2 ounces cream cheese, room temperature
Pinch of salt
INSTRUCTIONS
Preheat the oven to 300°F.
In a saucepan over medium heat, melt the butter. Stir in the vegetable oil, honey, and red pepper flakes. Cook 1 minute, until combined and fragrant.
Place the saltines in a large mixing bowl. Pour the hot honey mixture over top and toss gently but thoroughly until evenly coated.
Shingle the crackers in a single, touching layer on the baking sheet.
Bake for 20–25 minutes, until golden brown and candied but not burnt. Cool completely.
Meanwhile, in a mixing bowl or stand mixer, whip the goat cheese, cream cheese, and salt until light, fluffy, and doubled in volume, about 3–4 minutes.
Serve the cooled hot honey saltines on a platter with the whipped goat cheese for dipping.
Storage: Crackers can be made up to 1 week in advance. Cool completely, then store in an airtight container at room temperature.
